Long road trips can get expensive if you eat every meal at a restaurant. Instead, prepare some great recipes for when you’re on the road. If you have a motorized RV, you can even make something that requires refrigeration since you have access to the RV while someone is driving.

Build your favorite sandwiches, and then cut them in quarters. Stack them in an airtight container. You can keep the container in an ice chest or you can keep it in the fridge if your fridge is accessible. If your family is also traveling, you may want to make several different types including peanut butter and jelly, ham and cheese, bologna with tomato and cheese and turkey sandwiches.
Quick Fruit Turnovers
- 1 pop-can croissants
- 1 can of pie filling
- 1 egg
- 1 T water
Lightly grease the bottom of a cookie sheet. Place four of the croissants on the sheet and flatten them out just a tad more. Fill the center with the pie filling, and then cover with the other four croissants. Crimp the edges. Mix the egg and water thoroughly. Using a pastry brush, paint the top of each turnover. Cut two or three slits in the top. Sprinkle with sugar to taste. Bake as directed on the pop-can.
Allow the turnovers to cool, and then wrap each one separately or keep them all in an airtight container.
Fresh Chicken Salad Sandwiches
Debone leftover fried or baked chicken. Add it with relish, mayonnaise, salt and pepper to taste. Hit the “pulse” button several times until the mixture is mixed well but not ground to a pulp. Serve on hotdog rolls to make it easier to hold while traveling.

This festival is held in Oyster Bay on Long Island from October 18, 2014 through October 19, 2014. The Oyster Festival is the east coast’s largest waterfront festival; and it offers tons of activities – new and old favorites – and is designed to entertain the entire family. Admission is free and hours are from 11:00 a.m. until 6:00 p.m. daily. Head out to West End Avenue in Oyster Bay, New York, 11771 to catch the festivities.
Wine and Brew Festival at Hunter Mountain
If you are in the mood for a trip to the mountains, visit Hunter in the Catskills for the Wine and Brew Festival from October 18, 2014 through October 19, 2014. Set your GPS for Rte. 23A in Hunter, New York, 12442 and sample microbrews and fine wines from the Hudson Valley. Admission is free, however, there is a charge to take place in the sampling. In addition to tasting, the Skyride is open and zipline tours are available. You’ll also see many vendors with specialty foods, arts, crafts, entertainment, and a farmers’ market.
