Yellow Squash Casserole

Camping in New York will soon come to a screeching halt, but, in the meantime, there are still some adventures to be had for those who enjoy the crisper air and fall colors.

At Jim’s RV, we love RVing and we love new recipes for the road. We also like to take advantage of some of the seasonal fruits and vegetables Mother Nature brings us this time of year. Here is a recipe even those who are not big fans of squash may enjoy.

Yellow Squash Casserole

The ingredients you will need are:

Three pounds of yellow squash (sliced)

Five tablespoons of butter

One small onion about ½ cup (chopped)

One cup of sharp cheddar cheese shredded

Two eggs slightly beaten

¼ cup of mayonnaise

Two teaspoons of sugar

One teaspoon of salt

¾ cups of crushed buttery crackers

Slice three pounds of yellow squash and put the slices into boiling water and cook for about 10 minutes or until tender. Drain and put on paper towels to pat dry. Next, in a skillet, melt four tablespoons of butter, add the onion, and sauté the onion until done over medium heat. Take the skillet off the heat and add the squash, cheese, eggs, mayonnaise, sugar and salt. Put this mixture in a lightly greased baking dish. Melt the last tablespoon of butter and then add the crushed crackers. Sprinkle this over the casserole. Then bake it for 30 minutes at 350 degrees or until it is set.

Right now yellow squash is inexpensive and plentiful. This is a casserole that is made for this season and is easy to make. Let us know what you think and be sure to share your own recipes with us.
